We had friends visit for breakfast so we decided to make it special – flapjacks with berries, bacon, syrup, plain yoghurt and topped with a light sprinkle of cinnamon and sugar. What a treat 🙂
Flapjack recipe (makes 10-12)
1 cup sifted flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1 cup milk
3 tbsp melted butter
1. sift dry ingredients into a bowl, make a hole in the center of the flour and add wet ingredients.
2. if mixture is a bit lumpy that is perfect.
3. let it rest for at least 3 minutes before cooking (mixture can also be made the day before)
We served ours with mixed berries, streaky bacon, maple syrup, a dollop of plain yoghurt and a sprinkle of cinnamon sugar
