Stilbaai recipes – French toast

The last time we were in Stilbaai – every couple had a chance to cook, this time we changed it up a bit, we drew names out of a hat to see who cooks with who.

Werner and Jana got picked together. They are making breakfast and have decided on french toast.
Werner is no great cook, together for 5 years, and yet to make me a “proper” meal, meaning a piece of toast with cheese doesn’t count 😉 so I thought I better help Janz out…..However, I must say he REALLY surprised me, he was excited, really got involved and together they prepared a fantastic breakie.

Their plan was make a big board of french toast, then have little bowls filled with toppings, so people can decide on there own combinations of sweet or savoury or both.

1. cinnamon and brown sugar
2. maple syrup
3. crispy bacon
4. chargrilled cherry tomatoes
5. emmenthaler cheese
6. strawberries and blueberries

french toast – serves 8
Ingredients

24 large eggs
Pinch of salt
24 slices of bread (we did a combination of rye and ciabatta bread)
4 tablespoons butter
4 tablespoons vegetable oil

Method
1.Whisk together eggs, 1/2 the butter and salt in a bowl; set aside.
2.Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak.
3.Preheat oven to 100 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a pan over medium heat. Fry the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread.

SERVE WITH SELECTED TOPPINGS 🙂
