Stilbaai Recipes – Sweet zucchini Bread with sticky chicken pieces

Werner and I woke up at 3am on Saturday the 13 December, and started our long 14 hour road trip, our first long drive with our puppy, Cooper.

7 stops and a very long drive later we finally arrived in Stilbaai at 6pm, we were welcomed with a nice rustic braai consisting of chops, boerewors, homemade stuffed rolls and green salad.

The week before the cafe closed, so many customers said to me “You must really look forward to NOT cooking for 3 weeks” but actually I feel the exact opposite – I look forward to holiday cooking, its so different to cooking in the cafe. Far less stressful, I get to experiment with recipes, have a glass of wine while I cook, just peaceful.

Everyone made sure I didn’t have to cook for the first few days of holiday, so I could really have a break- but today I woke up excited to cook. Ilse and I are in cooking mode ready to cook dinner tonight. We had my godson, Daniel as our sous chef and off we went. We made Zucchini bread with sticky chicken pieces with a green salad. The bread recipe is taken from a magazine called “real food”.

Makes 1 big loaf

3 eggs
1/4 cup plain greek yoghurt
1/4 cup avocado oil
1 3/4 cup light brown sugar
1/2 cup mashed avocado
2 cups grated zucchini
2 teaspoons chopped rosemary leaves
grated peel of 1 orange
3 cups cake flour
1 teaspoon bicarb of soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup pinenuts (optional- we didn’t have pinenuts so used pumpkin seeds)

1. Preheat oven to 170 degrees. Grease a loaf pans (30cm x 12cm)
2. Mix the eggs, yoghurt, olive oil, sugar and avo
add the zucchini, rosemary, and orange peel. In a seperate bowl, combine the flour,baking powder,bicarb of soda, salt and 1/2 the pinenuts.
3. Combine the wet and dry ingredients and divide the mixture between 2 pans. Smooth the mixture on top and sprinkle with the nuts.
4. Bake for an hour until the crust is golden brown, insert a knife- if it comes out clean, it is cooked. Mine took about 1.5 hours (but i think it depends on oven temperature)  Cool in pan for 10 minutes before you take it out.

Sticky Chicken pieces (serves 8)

16 pieces of chicken
1 1/2 cups sweet chilli
1/2 cup soya sauce
30ml sesame seeds
1 thumb pieces of ginger
1 teaspoon of salt
1 zest and juice of 1 orange
30 ml of oilve oil

mix all ingredients together and toss with sauce.

I precooked chicken in oven for 40 minutes then the boys finished it off on the braai, and we served the bread with salad and the chicken.
