raw baby marrow, snow peas and sugar snap salad

snow peas

Definitely one of the freshest salads, vegan- friendly and it is great with anything.

Ingredients (serves 6 – 8)

1 x punnet of baby marrow
1 x punnet of sugar snap peas
2 cups snow peas
feta or ricotta cheese (optional)

Poppy seed dressing

• 60ml extra virgin olive oil
• 30ml white wine vinegar
• 1 teaspoon Dijon mustard
• 2 teaspoon sugar
• 1 clove grated garlic
• 1 tablespoon poppy seeds

– mix dressing together and toss together JUST before serving.

Method
1. Grate baby marrow, cut sugar snap peas into strips, add snow peas toss together and add dressing
