chorizo lentil & tomato soup


great recipe for this chilly winter…

Ingredients (serves 4)
• 2 tablespoons olive oil
• 2 cloves garlic (crushed)
• 1 onion cubed
• 300 grams chorizo (sliced & fried))
• 1 chilli sliced chilli flakes
• 1 can of lentils
• 2 tins of chopped tomatoes
• 500 ml chicken stock
• sea salt
• cracked black pepper

• Heat a large saucepan over medium heat. Add the oil, onion, garlic, chorizo and chilli and cook for 8-10 minutes or until the onion is tender and the chorizo is golden.
• Add the lentils, tomatoes, stock, salt and pepper, bring to boil and cook for 15 minutes or until the lentils are tender.
• Serve with crusty bread.
