My husbands family have been making these rusks for over 60 years, and what delicious rusks.
I started making them about 6 years ago and every winter it becomes a tradition 🙂 try them out- you won’t be disappointed.
Ingredients (makes 30)
2 cups brown sugar
1kg self raising flour
1 teaspoon baking powder
750g or a box of all bran
Pinch of salt
• Melt butter in a pan, take off heat and sugar and stir until combined
• Add buttermilk & eggs
• In a bowl mix flour, baking powder & salt, all bran, add to butter mixture, place in two large bread tins and bake at 180degrees for an hour. Remove from oven and when cool, cut into desired size, place on wired oven racks and dry out in oven at 80 – 100degrees overnight
