Roasted Corn Salad – Recipe


I love this recipe, its so great with a braai, and different to your typical Meilie.

Instructions (serves 4)
* 4 cobs of corn
* heaping tablespoons of cross and Blackwell mayonnaise
* 3/4 teaspoon chili powder
* a pinch of cayenne pepper
* 30ml white wine vinegar
* 1 clove garlic, crushed
* 125ml ricotta cheese, crumbled
*A handful of chopped fresh coriander
* Cherry tomatoes
* one red onion diced
* Crunchy roasted corn kernals
* Sea salt and black pepper

1.Slice the kernels from the cobs while still raw, toss them with a bit of olive oil and spread them in a baking pan. Then, put them in the oven at 180degrees until they are tender, chargrilled and caramelizing and making popping noises.
2.When your corn kernels are still warm but no longer piping hot, sprinkle them with some salt and pepper and toss them with the mayonnaise, the juice from the lemon, vinegar, crushed garlic, chili and cayenne. Then, fold in the ricotta and coriander. Taste and add salt and pepper to taste. And finally, when ready to serve, top with fresh cherry tomatoes, onion and crunchy roasted corn kernals (you can get them from Pick ‘n Pay or any fruit and veg shop.
