savoury cheese muffins

Savoury muffins are the best, I particularly like this recipe because its adaptable and so easy. The sponge doesnt go dry and it lasts a few days. So nice to serve with a crunchy salad for a light lunch!

2 cups flour
1/2 cup butter melted
3tsp baking powder
1/2 tsp salt
1 1/2 cups grated cheddar (or cheese of choice, I usually mix feta, mozzarella & cheddar)
1 egg
1 cup milk
handful of fresh herbs (parsley , corriander, basil or anything you have)
1 cup of sauteed veggies (i use anything i have in kitchen ie chopped red onions, grated carrots, grated baby marrow, red peppers, baby tomatoes…)

1. mix dry ingredients in bowl
2. mix all other ingredients in separate bowl
3. fold wet ingredients into dry (will be thick & dense)
4. do not over stir
5. place in liners and sprinkle with herbs, baby tomato slice & a cube of feta
6. bake on high for 15 – 20 mins
