Yoghurt, lemon & almond cake


My friend Ilse gave me this recipe, and everytime I have it in the cafe it disappears, it is delish and so easy to make!



250g butter, soft

200g brown sugar

4 eggs

280g self raising flour

pinch salt

150g ground almonds

250g plain yoghurt


honey lemon syrup

1/2 cup honey

160g white sugar

juice and zest of 1 lemon

1 stick cinnamon

3/4 cup water



130g sifted icing sugar

1 – 2 tablespoon hot water

zest of a lemon

flaked almonds for garnish



preheat oven to 180

beat butter and sugar well

add eggs 1 at a time, beat well

sift flour and salt and add ground almonds

add half flour mix, then half yoghurt and egg mi, repeat and combine well, stiring not beating

bake for +- 1 hour

remove from oven, poke with skewer all over and slowly pout honey syrup over it

allow cake to cool in the tin

turn cake out of tin once cooled and drizzle with icing
