death by chocolate cake

This is by far my favourite chocolate cake. It is super moist, lasts long and has a stunning rich colour, always ALWAYS a crowd pleaser !!

ingredients

3/4 cup boiling water

1/2 cup cocoa

1 3/4 cups cake flour

7ml baking powder

1 3/4 cups sugar

7ml bicarb of soda

1 teaspoon salt

1/2 cup oil

5 unbeaten egg yolks

3/4 cups water

7 egg whites (or 1 cup)

frosting (if you want loads double it)

225 g dark chocolate
225 g creme fraiche

method

use the same standard measuring jusg for all ingredients, nestle cocoa gives the darkest colour

1. blend cocoa and boiling water together, then cool

2. sift dry ingredients together, 3 times into a bowl

3. mix together the oil, yolks and cooled cocoa miture and blend well. Add to the dry ingredients and beat until very smooth. Add the cold water

4. whisk the whites until frothy

5. pour the yolk mixture over the whites and gently fold the 2 mixtures together

6. pour into a chiffon pan or a 22 – 25cm round baking pan

7. bake at 160C for approx. 1 hour 15 minutes until set and cooked through. Do not overcook.

Ganache:
8. melt the chocolate. Stir in the creme fraiche. When the mixture becomes too firm, place it in the microwave for a couple of seconds. It is easier to spread the ganache on top of the cake when it is still a bit warm and soft.

9. cut cake in half , spread lower half with chocolate ganach and reassemble. cover cake with chocolate ganache
