I had flat beans and a load of zucchini’s in my fridge, so I whipped this simple, delectable salad together. The walnuts give it a nice crunch. I made a simple zesty dressing using grapeseed oil, lemon juice and a touch of honey.
1 packet of zucchini’s shaved into ribbons (using a veggie peeler)
2 feta rounds crumbled
Handful of roughly chopped raw walnuts ( toasted)
9 T walnut oil
6 T lemon juice
1 t Dijon mustard
salt and pepper
Bring a pot of water to the boil and blanch the flat beans for 3 minutes. Drain and rinse with cold water
Shave the zucchini. Mix all the dressing ingredients a jar.
Toss the beans, zucchini and dressing together then top with feta, avo and walnuts.
Grind with salt and black pepper.
