Carrot Cake

All I can say about this recipe is that it’s simple, easy and DELICIOUS!!!


375g sugar

375ml sunflower oil

4 eggs

375g cake flour

2.5ml salt

10ml cinnamon ( I always put a touch extra, just because im obsessed with cinnamon)

10ml baking powder

10ml bicarb of soda

60g chopped pecan nuts + extra to sprinkle on top

750ml grated carrot


60ml icing sugar

250g creamed smooth cottage cheese (room temp)

1 tsp vanilla essence

  1. Preheat oven to 180 degrees
  2. Grease a 25 -30cm round bunt cake tin
  3. Beat oil, sugar and eggs until light and thick
  4. Sift all dry ingredients together
  5. Add sifted dry ingredients to oil mixture
  6. Add nuts and carrots
  7. Pour into greased, cake pan, bake at 180 for 1jr – 1hr 15min
  8. ICING: Sift icing sugar into softened cream cheese, add vanilla essence
  9. ice the cream cheese just onto the top of the cake
  10. Decorate with chopped pecan nuts
